Arabian Kabsa


Ingredients

Rice 1 kg
Chicken 1 kg
Tomato1
Onion 1
Whole spice 2 tsp
Black cardamom powder 3 tsp
Tomato paste 3/4 cup
Olive oil 6 tbsp
Currants 1/4 cup
Cinnamon stick 2
Garlic 1 tsp
Lemon juice 2 tsp
Black pepper 1 tsp
Almond as required
Pistacio as required
Salt to taste

Cooking Method

In a pan add oil and chopped onion then saute it.
Add tomato, garlic and all ingredients cook for 5 minutes.
Put 2 cup of water add add chicken in it cook until half done.
Take out chicken from pan and bake at 180C for 20  minutes.
In masala add rice and let it steam.
Dish out rice and put baked chicken on rice.
Ready to serve.
