Arvi Curry


Ingredients:

Arvi 1/4 kg
Onions 1/8 kg
Tomatoes 1/8 kg
Curd 2 tbsp
Turmeric powder 1/2 tsp
Aniseed 1/2 tsp
Green coriander a few sprigs
Salt to taste
Chilli powder to taste
Ghee as required

Cooking Method:

Peel and chop the arvi into four pieces lengthwise and deep fry to a golden brown.
Heat 2 tbsp ghee and add finely chopped onions.
When browned, add tomatoes and the dry spices.
Keep stirring till ghee separates from the curry.
Then add the fried arvi and well beaten curd.
Cover, cook on a low flame till arvi is tender and the gravy is thick.
