Mexican Rice


Ingredients:

½ kg soaked rice
1 onion
4 garlic cloves
2 cups stock
1 tsp salt
1 tsp black pepper
2 tomatoes
1 cup peas
2 tbsp chili paste
2 capsicums
½ cup oil
½ tsp lemon zest

Cooking Method:

1. Heat ½ cup oil and sauté 1 chopped onion
2. Add 4 chopped garlic cloves, and sauté until the aroma is given off.
3. Add 2 cups of stock along with 1tsp salt,1tsp black pepper,2tbsp chili paste and 2 chopped tomatoes
4. Add ½ kg soaked rice to the mixture and cook until done.
5. Lastly add2 chopped capsicums and sprinkle ½ cup of lemon zest on top.
